What exactly does AppSnapify track?

Everything on a public App Store or Google Play listing: every screenshot, the icon, the feature graphic on Play, the title, and the app version. When any of it changes, you get the old and new side by side.

How does it detect a change without inside access?

It reads the same public data the store page is built from. Both stores mint a new image URL when a developer replaces an asset, so comparing today's listing against the last snapshot reveals exactly what moved. No account with the competitor and no store login is involved.

How often are listings checked?

Daily on the free plan, and as often as every few hours on paid plans. Each tracked app keeps its own schedule, and you can always trigger an immediate check yourself.

Is this allowed?

Yes. AppSnapify reads publicly available store pages, exactly as any visitor's browser does. The artwork remains the copyright of its publisher, so use the tool for monitoring and research rather than republishing another company's creative as your own.
